“That fish looks exciting…”
Those are the words my my father-in-law said when he saw me preparing this tilapia for dinner last night. And I’ll tell ya, it was pretty exciting.
I pulled this recipe out of Liz Weiss and Janice Bissex’s newest cookbook, No Whine with Dinner. I’ve been following these ladies since I started blogging almost 3 years ago. I have always been impressed by Liz and Janice and their dedication to keeping things interesting and healthy at mealtime for the family. They are always busy with projects, from their weekly podcasts, to their awesome blog and now their second published cookbook No Whine with Dinner (The Mom’s Guide to Meal Makeovers was their first)!
What I loved about this recipe was the awesome crunchy crust on the fish. The Old Bay, cinnamon and brown sugar worked so nicely together. My kiddos ate a whole piece each and continued to ask for more. We’ll definitely be making this again.
Thanks for the thumbs up kids!
Get yourself organized before making this. Get your ingredients all out and make the breadcrumbs first…I didn’t chop the almonds, I actually used my fingers to crush them and combine with the panko and seasonings. I loved that the almonds were chunky in the coating, but that was my preference. If you’d like a finer almond crust, by all means, pull out your knife and give them a good chop. Once your breading station is set up, the process is easy…and the fish cooks up quite quickly so dinner will be ready in no time.
I roasted up some broccoli and carrots along with some tomatoes at the same time to save time and to keep things easy on clean up too.
Try this next time you are in the mood for a good fish dinner. It was enjoyed by all of us and my husband was lucky enough to snag some leftovers for lunch today. I would have loved to have it over a green salad for my lunch today…next time I’ll have to plan better.
Almond-Crusted Tilapia
Recipe from No Whine with Dinner by Liz Weiss and Janice Newell Bissex
1 1/2 lbs tilapia (4-6 fillets)
1 cup sliced or slivered unsalted almonds, finely chopped
3 tablespoons plain dried breadcrumbs (I used panko)
2 tablespoons brown sugar
3/4 teaspoon reduced-sodium Old Bay Seasoning (I used regular Old Bay and less salt in rest of recipe)
1/2 teaspoon kosher salt
1/4 teaspoon ground cinnamon
1/2 teaspoon black pepper
1 large egg
1 tablespoon water
1/4 cup all purpose flour
Preheat oven to 425 degrees. Place tilapia on cutting board and slice each fillet down the center where the fish connects to create 2 smaller fillets. Season both side of the fish with salt and pepper and set aside.
Lightly oil or coat a large baking sheet with nonstick cooking spray and set aside. Combine the almonds, bread crumbs, brown sugar, Old Bay Seasoning, salt, cinnamon and pepper in a shallow bowl. Whisk together the egg and water in another bowl, and place the flour on a large plate.
To bread the fish, coat both sides with the flour and shake off excess. Dip in the egg and then coat evenly with the nut mixture. Place the fish on the baking sheet, mist with nonstick cooking spray and bake until golden brown and the fish is cooked through, about 15 minutes.

(Giveaway now closed)
So here’s the scoop on the giveaway…
Liz and Janice would love to share a copy of their No Whine with Dinner cookbook with one of my readers. Lots of great recipes in this book including one of my very own in the Blogger’s Best chapter!
Along with the Blogger’s Best chapter, you’ll find lots of tips from moms on “how to get your pickiest eaters to try new foods” as well as a great chapter on “healthy basics” and “pantry items”. The fact that Liz and Janice are both registered dietitians and are sharing a wealth of information on family nutrition in each chapter makes this a cookbook that I am very happy to have in my collection.

I usually fry our fish but I am looking for ways to make healthier meals. I have the most picky kids. All my friends agree.
I like meal makeover moms on facebook. They are the reason I found your blog.
We love grilled salmon topped with a saute of olive oil, garlic, cherry tomatoes, a handful of fresh spinach and feta cheese. But it is nice ot have a crunch ever so often, so I plan to try this almond coating on our fresh walleye in the spring.
I love to cook fish on my Big Green Egg. It’s easy to blacken and leave the smells outside.
I need to learn how to cook fish for my family!
My favorite fish recipes is Broiled Tilapia Parmesan from allrecipes.com. It’s amazing and amazingly easy. I serve it to guests and always get compliments. Yum! Thanks for the giveaway!

I love fish, but am not very good cooking it. Always looking for new recipes.
My favorite is Salmon with e.v.o.o, dill, and garlic. Sooooo good!
i like to put a light mayo sauce on my salmon and serve it with quinoa and broccoli
That looks really good. We only eat mild white fish and this looks like a great healthy way to prepare it. I usually mix fat free mayo with pickle relish and broil it on top of the fish just before it is done.
I have a husband who won’t eat it, but i am determined to let my daughter make up her own mind about fish. I bread it lightly in an egg wash and panko and bake it until it’s crispy…she likes it with ketchup.
This is most certainly an exciting looking piece of fish. My favorite fish is salmon. And this is how I like to serve it up – http://www.achicabakes.com/2010/11/tamari-roasted-salmon.html

Just have to post that this fish is in the over for tonight and am hoping the boys love it as much as yours did! Thanks for always posting the best recipes. I am serving this with red beans and rice and a green salad! Can’t wait!
I LOVE to wrap up salmon in foil (with seasonings, butter & lemon juice on it) & then grill it for about 8 minutes each side. All four of my boys (& hubby!) devour it
Best part is no dishes or fish smell in my house!
My favorite way to serve fish is the simplest way: pan fried with just a bit of butter and a splash or so of lemon and a couple of grinds of the mixed pepper mill. Fish is so delicious, I hate to do too much to it!
Hi Aggie-The photo of the kids is too cute and love their gingerbread cutouts on the fridge!! This tilapia looks fantastic!I never made almond crusted tilapia. Always used to make with caramelized onions…but this is something I will try soon:)
I follow you on twitter…a whole lot;)
I believe I “like” you on Facebook. Going over now to double check;)
Seafood is always on the menu at my house, and this looks to be such a delicious new way to cook it. Can’t wait to try!
My husband usually fries it.
I love to make fish tacos with breaded fish. The kids love them!
Looks tasty! I bet my kids would like it too.
We make this one a lot http://wp.me/p150Ow-gj
My husband and I love Five Spice Tilapia from one of the magazines we read. Simply sprinkle the tilapia on both sides with Chinese Five Spice and pan saute in a touch of oil. Then make a sauce of brown sugar and soy sauce. Let it cook with the fish for the last 2-3 minutes. Serve with chopped scallions and brown rice. So yummy.
The seasoning on the fish sounds incredible and I loved roasted broccoli. Of course, I think any mom can use a kid friendly, great cookbook- this sounds awesome!
Hi Aggie! This is a great book & I too am a big fan of Liz and Janice. I all ready have a copy and love it. The winner will enjoy it so
Must make this tilapia. xo
MMMM, I love fish… my family not so much! I grew up on fresh Alaskan Salmon, nothing compares! My favorite way to enjoy it is just wrap it in tin foil with a little lemon and thyme and throw it on the grill next to some asparagus or zucchini, and mmmmm!
i don’t serve a lot of fish currently but would like to do more – that recipe looks like a great place to start.
That dish looks absolutely fabulous! I don’t really like fish, but I LOVE almonds- so healthy!
Discovered you on Facebook..
This recipe looks divine~
Thanks!!
My fav fish is Wild Salmon, broiled w ginger-tamari marinade. I used to love Tilapia until I read about the way they are farmed and shipped makes them unhealthy.
I would like a copy of this cookbook and also I love your blog and am following you now.

One way that I like to serve fish for dinner is as fish tacos. I just cook tilapia with a medium jar of salsa at 400 uncovered until flaky. I then put the fish-salsa mixture into tortillas and serve as I would tacos. It’s really good just as is wrapped in a tortilla, but it is also good with fresh diced tomato and avocado.
