Almond-Crusted Tilapia

“That fish looks exciting…”

Those are the words my my father-in-law said when he saw me preparing this tilapia for dinner last night.  And I’ll tell ya, it was pretty exciting.

I pulled this recipe out of Liz Weiss and Janice Bissex’s newest cookbook, No Whine with Dinner.  I’ve been following these ladies since I started blogging almost 3 years ago.  I have always been impressed by Liz and Janice and their dedication to keeping things interesting and healthy at mealtime for the family.  They are always busy with projects, from their weekly podcasts, to their awesome blog and now their second published cookbook No Whine with Dinner (The Mom’s Guide to Meal Makeovers was their first)!

What I loved about this recipe was the awesome crunchy crust on the fish. The Old Bay, cinnamon and brown sugar worked so nicely together. My kiddos ate a whole piece each and continued to ask for more.  We’ll definitely be making this again.

Get yourself organized before making this.  Get your ingredients all out and make the breadcrumbs first…I didn’t chop the almonds, I actually used my fingers to crush them and combine with the panko and seasonings.  I loved that the almonds were chunky in the coating, but that was my preference.  If you’d like a finer almond crust, by all means, pull out your knife and give them a good chop.  Once your breading station is set up, the process is easy…and the fish cooks up quite quickly so dinner will be ready in no time.

I roasted up some broccoli and carrots along with some tomatoes at the same time to save time and to keep things easy on clean up too.

Try this next time you are in the mood for a good fish dinner.  It was enjoyed by all of us and my husband was lucky enough to snag some leftovers for lunch today.  I would have loved to have it over a green salad for my lunch today…next time I’ll have to plan better.

Almond-Crusted Tilapia

Ingredients:

  • 1 1/2 lbs tilapia (4-6 fillets)
  • 1 cup sliced or slivered unsalted almonds, finely chopped
  • 3 tablespoons plain dried breadcrumbs (I used panko)
  • 2 tablespoons brown sugar
  • 3/4 teaspoon reduced-sodium Old Bay Seasoning (I used regular Old Bay and less salt in rest of recipe)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon black pepper
  • 1 large egg
  • 1 tablespoon water
  • 1/4 cup all purpose flour

Directions:

  1. Preheat oven to 425 degrees. Place tilapia on cutting board and slice each fillet down the center where the fish connects to create 2 smaller fillets. Season both side of the fish with salt and pepper and set aside.
  2. Lightly oil or coat a large baking sheet with nonstick cooking spray and set aside. Combine the almonds, bread crumbs, brown sugar, Old Bay Seasoning, salt, cinnamon and pepper in a shallow bowl. Whisk together the egg and water in another bowl, and place the flour on a large plate.
  3. To bread the fish, coat both sides with the flour and shake off excess. Dip in the egg and then coat evenly with the nut mixture. Place the fish on the baking sheet, mist with nonstick cooking spray and bake until golden brown and the fish is cooked through, about 15 minutes.

  27. My favorite salmon recipe is the same whether I am grilling or baking. First I place salmon in my plastic bag of marinade which is a mixture of lemon juice, olive oil, crushed garlic, minced dill, S & P that has been well blended. The salmon can marinade for 1 to 24 hours. I prepare a heavy duty sheet of aluminum foil for each salmon serving (steak) and lay the salmon in the center. I then placed thinly sliced onion and lemon plus dill sprigs over the top of the salmon. I carefully fold the foil to make a steam pocket type container and then cook. The salmon is so flavor and flaky. People swoon over it and think that I am special! ;-]

  34. Fun giveaway. My kids love when I take maple syrup and Dijon and make a glaze over the stove and brush it on the salmon. Then broil or grill. It has a great salty/sweet flavor

  38. When it comes to fish, like tilapia, I am pretty boring. I prefer evoo, salt, pepper and broil until the edges have some crunch. This gives me more time to be creative with the side dish and dessert:)

  44. I like to sprinkle some Cajun seasoning and crushed Melba toasts on my Tilapia and then wrap it in a foil packet and roast it in the oven @ 425 degrees for about 10 minutes. Tastes great and it so healthy!

  45. Broiled Salmon with Orange Dijon Sauce

    ½ cup orange marmalade
    2 tablespoons Dijon mustard
    1 teaspoon minced garlic
    1 teaspoon minced fresh ginger
    Salt & pepper
    4 8oz salmon fillets

    Set oven to broil.
    In a medium bowl, whisk together first four ingredients. Place fish on a foil-covered broiling sheet. Baste filets with half of the glaze. Place under broiler; cook 6 minutes. Baste the fish again with the rest of the glaze; broil 3 minutes more.

  66. That looks really good. We only eat mild white fish and this looks like a great healthy way to prepare it. I usually mix fat free mayo with pickle relish and broil it on top of the fish just before it is done.

  79. I LOVE to wrap up salmon in foil (with seasonings, butter & lemon juice on it) & then grill it for about 8 minutes each side. All four of my boys (& hubby!) devour it 🙂 Best part is no dishes or fish smell in my house!

  80. My favorite way to serve fish is the simplest way: pan fried with just a bit of butter and a splash or so of lemon and a couple of grinds of the mixed pepper mill. Fish is so delicious, I hate to do too much to it!

  88. My husband and I love Five Spice Tilapia from one of the magazines we read. Simply sprinkle the tilapia on both sides with Chinese Five Spice and pan saute in a touch of oil. Then make a sauce of brown sugar and soy sauce. Let it cook with the fish for the last 2-3 minutes. Serve with chopped scallions and brown rice. So yummy.

  91. MMMM, I love fish… my family not so much! I grew up on fresh Alaskan Salmon, nothing compares! My favorite way to enjoy it is just wrap it in tin foil with a little lemon and thyme and throw it on the grill next to some asparagus or zucchini, and mmmmm!

  95. My fav fish is Wild Salmon, broiled w ginger-tamari marinade. I used to love Tilapia until I read about the way they are farmed and shipped makes them unhealthy.

  97. One way that I like to serve fish for dinner is as fish tacos. I just cook tilapia with a medium jar of salsa at 400 uncovered until flaky. I then put the fish-salsa mixture into tortillas and serve as I would tacos. It’s really good just as is wrapped in a tortilla, but it is also good with fresh diced tomato and avocado.

  98. I love fish every possible way it can be fixed….but I especially love it baked, broiled, or pan fried with lemon and capers. Any kind of fish stew is also wonderful.

  105. We do a very easy broiled fish – just S&P on some tilapia filets and stick them under the broiler. Flip after a few minutes. Serve with lemon wedges and roasted veggies.

  109. My husband & I absolutely love to bake salmon in the oven topped with a little olive oil, salt & pepper, a good smear of Dijon mustard, and a nice sprinkling of chopped fresh herbs (especially love combo of parsley, basil, & dill). Couldn’t be easier & oh so tasty!
