Eat your Broccoli!
Posted by Aggies Kitchen on February 9th, 2010. Filed under: Aggie's Kitchen Original, Healthy, Side Dish - Vegetable.I debated posting this recipe, since it’s such a simple one…but it’s one of those recipes that is so good that I had to share “just in case” any of you have never tried roasted broccoli. Since I did get a couple of emails asking how to roast broccoli, I decided that it was definitely a “blog-worthy” recipe. So simple…so good. If you are trying to make things a little more exciting in the veggie department, please try this one.
And I have to add that this recipe is definitely kid friendly…my kids gobble up their broccoli when I make it for them like this.
I would highly recommend using a course salt and fresh ground pepper with this recipe. Enjoy!
Roasted Broccoli
Recipe from Aggie’s Kitchen
1 head broccoli, cut in florets
1-2 tablespoons olive oil
sea salt or kosher salt
fresh ground pepper
1-2 garlic cloves, minced (optional)
red pepper flakes (optional)
Toss broccoli florets with a little olive oil, salt and pepper (and some chopped garlic or red pepper flakes if you like). Roast in 400 degree oven for about 20 minutes or until slightly crisped and browned.

I hate to waste so I use the stalks in stir fry. If you peel the outer layer off it tastes like a bamboo shoot.

I am SO glad you posted this! I recently roasted cauliflower and was amazed by how wonderful it tasted. I wondered if I could do the same with broccoli – now I know! Thank so much!!!!

In the beginning, I really needed recipes for roasted vegetables of all kinds, particularly to give me some guidelines on time and temperature. I also never would have used red pepper flake on broccoli had I not seen recipes like this one. So yay for posting this – you never know who’s reading or what they’re learning from it!

Also? This is our favorite weeknight vegetable side, hands down. And having seen it now, I may put it in for tonight.

Aggie,
I’ve never roasted broccoli so I’m glad you posted this. I’m going to try it this way the next time I make broccoli. I love the picture of the broccoli sitting on it’s head. It looks like an upside down tree : )

I’ve always liked brocoli and that sounds delicious! I’ll probably try this next weekend, will be a nice change from the sauteed broccoli.
Usually when I make roasted vegetables I put carrots, green peppers and green beans in a pan and sprinkle some balsamic vinegar and garlic powder on them.

I LOVE roasted broccoli and actually make this quite often. The only difference is that I like to sprinkle a little fresh lemon juice on top. Yum!
