And you know what? Before I even got to the part about using lemon hummus, I was already thinking that would be perfect! Of course it would be great to experiment with some other flavors too, like a spicy chipotle or red pepper hummus. I think my husband and I would really enjoy this as a change to our regular lunch routine!
