Spaghetti with Chicken and Vegetables in Lemon Sauce
Posted by Aggies Kitchen on August 19th, 2009. Filed under: Chicken, Healthy Meals, Italian, Main Dishes - Chicken, Main Dishes - Pasta, ve.After Barilla contacted me and explained the “challenge” to me I looked in my pantry and found several boxes of their whole grain pasta. The “challenge” is to go out and buy a box of Barilla Whole Grain pasta and try it. If you don’t like it, they will send you a voucher for a regular box of their other pasta. Not such a bad deal is it?
I personally have been using this line of pasta for quite some time already. I don’t really remember when I made the switch to whole grain, but once I did, I never thought twice about it. I come from an Italian family so it’s not like I don’t eat white pasta…but I do make it a habit to go whole grain for more “everyday” eating if you know what I mean. It’s what I cook for my husband and kids and they honestly don’t know the difference.
I made this pasta the other night and it’s one of those all in one meals that can be thrown together with whatever veggies you have on hand. I started with this recipe that my sister in law sent me after I told her I had a ton of fresh sage in my herb garden. I used Barilla Whole Grain Spaghetti and took the recipe just a bit further and added some fresh veggies to it…red pepper, squash and zucchini…dinner was complete. I love adding lemon to a pasta dish like this, it’s perfect for a night where you don’t want to eat too heavy and aren’t in a saucy type of mood.
Leave a comment and let me know if you plan on participating in the Barilla “That’s Whole Grain?” Taste Challenge or if you are already a fan of whole grain pastas. If you have a favorite healthy pasta recipe go ahead and share it with the rest of us by leaving a link to it!
Enjoy!

Lucky you Aggie. Our all time favourite is Summer Spaghetti made with a healthy dose of sun-ripened tomatoes, garlic and feta cheese. You can lighten it up by using ricotta instead which I do often. I try to use whole grain pastas whenever I can, but I'm still trying to get the family to switch over. Your dish sounds like a great way to use it and full of fresh flavor.

This looks like a great spaghetti recipe. I am already a fan of whole grain pastas. I have Barilla in my pantry too.

I too like the whole grain pastas, but not everyone in my family does. Some you can't even tell the difference, but some are just so hearty you can, and the kids know it, lol.

I love pasta this way with lots of yummy veggies, hold the sauce.
I hadn't heard about the challenge but it sounds like a fun one!

Oh Aggie, how exciting that a) Barilla contacted you and b) you got to participate on that conference call! You're famous!
I fear I'm probably your only follower who is actually turning away from whole grains and and also wheat … my daughter can't tolerated them. We've actually been eating gluten free rice pasta like it's going out of style. As I'm Italian, too, I'll always love a good semolina flour pasta, even though we don't eat it anymore, and Barilla is a good choice for that! Love your chicken, veggies, and lemon sauce! YUM! Congrats again!

Your pasta has captured all the fresh flavors of summer. It really looks wonderful, Aggie. I'm not having a great deal of luck converting my family to whole wheat pasta, but I'll keep trying.

I love Barilla pasta although my husband only likes the regular kind. I will have to try it again on him!

I would love to do the challenge… but I'm just not a fan of whole grain pasta. I keep trying to be, but I guess I like my normal pasta. I would definitely make this recipe you posted, but with regular pasta instead. I really wish I enjoyed whole grain pasta more because I know it would be better for me!

Aggie,
This looks so delicious. How was the sage in it? I will have to make this soon. After also participating in that Bob Greene call, I finally tried some whole wheat pasta in a pasta salad. It was really good. I'm going to keep trying others.

I've long been a convert to whole grain pastas – and I'm particularly glad that my husband doesn't mind them at all either! There are a few great brands that don't taste any different than white pasta.

Yumm! I'm so making this for dinner.
