What I love about cooking Mexican is all the fresh ingredients. You don’t find fresh Mexican like this out in restaurants often, at least I don’t. A meal like this is really easy to put together at home, and you can feel good about it too. Even my son enjoyed his little taco…I felt really good about that!
Recipe from For the love of cooking
1 1/2 – 2 lbs of flank steak
1/3 cup vinegar
1/2 cup soy sauce
1/2 cup olive oil
1 tsp cumin
1-2 tsp black pepper
1 tsp salt
1 tsp garlic powder
1 tsp chili powder
1 tsp paprika
1 tsp onion powder (I substitued chives since I was out of onion powder)
1 1/2 tsp oregano
2 limes, juiced
4-5 cloves garlic minced
In a gallon size Ziploc bag, combine all ingredients with flank steak and mix really well. Let marinate for at least 6 hours – overnight if you can.
Grill steak until desired degree of doneness. LET SIT FOR AT LEAST 5-10 MINUTES! Once the meat has cooled, slice ACROSS grain into small chunks.
Recipe from Aggie’s Kitchen
1 can of diced tomatoes (Mexican or Fire Roasted), drained
1/2 small red onion, chunked
1-2 jalapenos, seeded and deveined, chunked
2 garlic cloves
1 lime, juiced
small bunch of cilantro, chopped
salt and pepper, to taste
Throw all of the ingredients in food processor and pulse to desired consistency.
