Carne Asada Tacos

If you haven’t been over to visit Pam at For the love of cooking you are seriously missing out. She makes the most delicious food…especially Mexican inspired food. I have made these Carne Asada Tacos before, and I surprised my husband with them again over the weekend. He loves his steak so this meal definitely put a smile on his face.

What I love about cooking Mexican is all the fresh ingredients. You don’t find fresh Mexican like this out in restaurants often, at least I don’t. A meal like this is really easy to put together at home, and you can feel good about it too. Even my son enjoyed his little taco…I felt really good about that!

Carne Asada Tacos
Recipe from
For the love of cooking


1 1/2 – 2 lbs of flank steak
1/3 cup vinegar
1/2 cup soy sauce
1/2 cup olive oil
1 tsp cumin
1-2 tsp black pepper
1 tsp salt
1 tsp garlic powder
1 tsp chili powder
1 tsp paprika
1 tsp onion powder (I substitued chives since I was out of onion powder)
1 1/2 tsp oregano
2 limes, juiced
4-5 cloves garlic minced

In a gallon size Ziploc bag, combine all ingredients with flank steak and mix really well. Let marinate for at least 6 hours – overnight if you can.

Grill steak until desired degree of doneness. LET SIT FOR AT LEAST 5-10 MINUTES! Once the meat has cooled, slice ACROSS grain into small chunks.

Serve your tacos on corn tortillas with guacamole, Quick Salsa (see recipe below), Pam’s Onion, Cilantro and Lime Juice Relish and your favorite Mexican cheese!

Quick Salsa
Recipe from Aggie’s Kitchen

1 can of diced tomatoes (Mexican or Fire Roasted), drained
1/2 small red onion, chunked
1-2 jalapenos, seeded and deveined, chunked
2 garlic cloves
1 lime, juiced
small bunch of cilantro, chopped
salt and pepper, to taste

Throw all of the ingredients in food processor and pulse to desired consistency.

This looks sooo good! I’m excited because it doesn’t look too difficult and all the ingredients are things my non-foodie boyfriend will eat (besides the salsa — more for me!). This will help get me away from using preseasoned taco mix!

I’m not very good with HTML either. :o ( I just know the little I’ve picked up from doing my own blog.

Another resounding “I love Pam!” over here. She’s awesome. A almost consider her more than a blog, she’s a resource. Someone whose page I would actually go to on its own to search for dinner ideas.
