Chorizo and Eggs

This breakfast was absolutely delicious. After our Foodbuzz 24 pizza party on Saturday, we were left with lots of great leftover ingredients in the fridge. Sunday morning, our only dilemma was what to scramble with our eggs for breakfast. My husband was pushing for prosciutto and salami with eggs…but I won this time (or as he would say…every time) with this combination.


I can’t say he was disappointed.

Chorizo and Eggs
Recipe from Aggie’s Kitchen

Serves 2

2 links fresh chorizo
4 eggs, whisked
shredded Mexican blend cheese
chopped tomatoes
chopped onions
hot sauce

Crumble chorizo in non stick skillet over medium heat. Cook until meat is no longer pink. Add eggs and cheese to pan and scramble until completely cooked through.

Serve eggs topped with chopped tomato, onion and hot sauce.

(PS…It may have been my idea…but my sweet husband actually cooked this yummy breakfast up!)

The perfect breakfast. I make something similar but mine gets rolled up in a tortilla and a little more love from my good buddy Mr. Hot Sauce.

I am going to have to run to the Mexican market now to get some chorizo and queso for the weekend now.

Oh wow. This is a great breakfast! But I will probably make it for dinner one of these nights – breakfast for dinner has bailed me out more times than I can say. This will be a huge treat!

My mom used to make this for us to eat for breakfast. Sometimes she would use Dominican Chorizo. So good! Good recipe. I need to make this for my husband.
