Barefoot Bloggers – Whole Wheat Banana-Nut Sour Cream Pancakes

Posted by Aggies Kitchen on January 8th, 2009. Filed under: Barefoot Bloggers, Barefoot Contessa, Breakfast, Ina Garten.
I have to thank Karen of Something Sweet by Karen
for picking such a great Barefoot Bloggers recipe this month! Who wouldn’t love these pancakes?

I tweaked a few things in the recipe like subbing whole wheat flour and adding some healthy flax meal and crunchy almonds. These were such a treat for me…I grew up on Bisquick so making pancakes from scratch is something I just recently did for the first time when making these Whole Wheat Pumpkin Pancakes. Sorry Bisquick, but I think your days on my pantry shelf are over.

Whole Wheat Banana-Nut Sour Cream Pancakes
Recipe adapted from Barefoot Contessa Family Style Cookbook

1 cup whole wheat flour
1/2 cup all purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1 1/2 teaspoons kosher salt
1/2 cup light sour cream
3/4 cup plus 1 tablespoon non fat milk
2 extra-large eggs
1 teaspoon pure vanilla extract
1 teaspoon cinnamon
1 teaspoon grated orange zest
2-3 tablespoons flax meal
Non stick spray
2 ripe bananas, diced, plus extra for serving
1/4 cup sliced almonds, crushed
Pure maple syrup

Sift together the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the sour cream, milk, eggs, vanilla, cinnamon and orange zest. Add the wet ingredients to the dry ones, mixing only until combined. In a separate bowl, add diced bananas and crushed almonds and gently toss together.

Spray large skillet with non stick spray and heat over medium-low heat. Ladle the pancake batter into the pan to make 3 or 4 pancakes. Distribute a rounded tablespoon of banana-almond mixture on each pancake. Cook for 2 to 3 minutes, until bubbles appear on top and the underside is nicely browned. Flip the pancakes and then cook for another minute until browned. Wipe out the pan with a paper towel, add more non stick spray to the pan, and continue cooking pancakes until all the batter is used. Serve with sliced bananas and maple syrup.

Tonight is a big night in my little part of the world…

Good Luck FLORIDA GATORS in the
National Championship Game!

I gave up Bisquick about a year ago, but recently served them again thinking my boys would think it was a treat not to have whole wheat pancakes. But they said the Bisquick ones weren’t as good as our regular ones! These sound yummy!

No Bisquick in my house either!

Those look fantastic, pancakes are one of my all time favorite things. I didn’t have Bisquick pancakes till I moved out of my parents house, my mom was raised on a farm and could whip up pancakes in a matter of seconds. :)

GO GATORS! Make the SEC proud and stop all this nonsense talk about who should be #1!
Sorry, Aggie- I just had to get that off my chest.
Anyway, now that I am calm- I love what you did with this recipe. I am going to have to make them again just so I can up them a bit to your level. I agree with your goodbye to Bisquik!

Loved the whole wheat substitution idea….always like it when someone introduces a healthy alternative!

Unfortunately, I won’t be pulling for your Gators tonight (they embarrassed my Buckeyes two years ago :( ) but I hope it’s a good game!

Wow, just saw something similar on Prudy’s blog… and I totally love it.
And whole wheat makes it so much better.

glad you liked them! flax meal and almonds are a great idea for making them healthier. from all the different variations i’ve seen today, it seems like this is the perfect recipe for lightening up without any flavor being compromised.

I too, added some whole grains to mine. I think it improved the flavor,as I have made them several times both ways.

  27. MaryBeth

Thanks for visiting my site…your pancakes look awesome. They sound so wonderful and rich.

  28. Bridgett

I love Ina’s recipe so much that I made loads of the dry ingredients to store in a container and doled it out when I needed it. That way I only had to add the wet when I made them. Makes life easy and so much better than Bisquick! Great idea with the whole wheat.

  29. Suzie

Lovely looking pancakes. Wish I had some more….
