Grilled Sweet Potato Salad and some Awards

This one is a winner! I love sweet potatoes but for some reason don’t cook them often. When we do have them, they are almost always roasted but I have found a new favorite way to eat sweet potatoes. This “salad” is so refreshing and healthy…everyone loved it. I can’t wait to make it again!

Grilled Sweet Potato Salad
recipe from epicurious.com

2 1/2 pounds sweet potatoes
1/4 cup olive oil
1 teaspoon salt
1 teaspoon ground cumin
1 scallion
2 teaspoons fresh lime juice
lime wedges
1/4 cup fresh cilantro leaves (I actually forgot to use these and it was still wonderful)

In a large saucepan cover potatoes with salted cold water by 1 inch and simmer, covered, until just tender, about 15 to 30 minutes, depending on size of potatoes. In a colander drain potatoes and rinse under cold water to cool. With a sharp knife peel potatoes and cut crosswise into 1/2-inch-thick slices.

While potatoes are boiling, prepare grill. In a small bowl whisk together oil, salt, and cumin and brush some onto both sides of potato slices, reserving remaining cumin oil.

Grill slices on an oiled rack set 5 to 6 inches over glowing coals until golden brown, about 1 minute on each side, and transfer with tongs to a platter. Thinly slice scallion diagonally and sprinkle over potatoes. Whisk lime juice into remaining cumin oil with salt and pepper to taste and drizzle over potatoes. Serve potato salad with lime wedges and sprinkled with cilantro.

I want to thank Anne Strawberry for the “i love you this much” award…like Anne I have a tendency to show people how much I love them by cooking for them, it just comes naturally to some of us I guess. I would feel very loved if I had Anne cooking and baking for me…she always has something delicious to share with all of us on her blog!

I’d like to pass along this award to the following foodie bloggers who I know show their families how much they love them with food:

Mary Ann from Meet Me in the Kitchen
Stephanie from Stephanie’s Kitchen
Lisa from Jersey Girl Cooks
Paula from It’s all gouda
and
Bridgett from La Bella Cook

I’d also like to thank Katherine over at Smoky Mountain Cafe for the “Kick Ass Blogger” award!

I’m passing on this award over to Jenn The Left Over Queen because she has got to be the most kick ass blogger I know. She’s got so much going on. She is a fabulous cook with an awesome blog, hosts a monthly Foodie Joust, just coordinated a gathering of Florida Foodies (which I am so sorry to have missed!) and recently launched the New Foodie Blogroll! Now that is kick ass. Jenn’s blog is the first blog I accidentally discovered when browsing for recipes one night, before I really even knew what a blog was. I got so excited about her blog that I had to start my own.

Hope everyone has a great day! : )
