Grilled Marinated Flank Steak

Since more of us are cooking on the grill these days, I’ve decided to share a recipe that my sister in law gave me recently for a delicious marinade. I used it with flank steak but it would also be great with a london broil. I left my steak on the grill a little longer than I wanted to – would have liked to see more pink in the middle! This would be perfect for an easy weeknight dinner – if you can remember to marinate the steak that morning or the day before.

Soy, Ketchup, and Sesame Marinade

3/4 cup low-sodium soy sauce
1/4 cup ketchup
1/4 cup chopped scallions
1 1/2 TBLS sesame oil

Combine all ingredients in large zip-top plastic bag. Add 1 lb (or larger) flank steak. Refrigerate for at least 4 hours or overnight. When ready to grill, remove steak from bag, discard marinade. Grill steak 6 minutes on each side or until desired degree of doneness. Remove from grill and cut diagonally across grain into 1/4 to 1/2 inch slices.
